Step-by-step guide to making Corn Pie

Ingredients:

- 1 cup water
- 2 medium onions
- 5 cloves garlic
- 2 teaspoons sea salt
- 3 medium carrots, cubed
- 1/2 cup celery, chopped
- 2 cups cream style corn
- 1 cup coconut milk or unsweetened Almond milk
- 1 cup toasted cornmeal

Directions:

1. In a pot, combine 1 cup of water, 2 medium onions (chopped), and 5 cloves of garlic (minced).

2. Simmer the mixture over medium heat until the onions become clear and translucent.

3. Stir in 2 teaspoons of sea salt, cubed carrots, chopped celery, cream-style corn, and either coconut milk or unsweetened almond milk. Allow the mixture to simmer for a few minutes until the vegetables start to soften.

4. Gradually add 1 cup of toasted cornmeal to the pot while continuously stirring to prevent lumps from forming.

5. Continue to cook and stir the mixture until it thickens to a porridge-like consistency. This should take about 5-7 minutes.
